Hello! This weekend I made panini sandwiches with roasted red peppers, chicken, cheese, and avocado. They turned out great! Here’s how I made them:
- I cooked 3 chicken breasts by boiling them in water for 15 minutes. I prefer poaching over other cooking methods because it keeps the chicken from drying out. After the chicken was done cooking, I removed it from the pan, sliced it in to strips and then placed them in an empty pan. I then cooked the chicken a bit longer to remove the extra water and I sprinkled a tablespoon of Cajun seasoning for extra flavor.
- I took a jar of roasted red peppers, removed the peppers and sliced them in to strips. Then I put them in a separate pan and heated them up.
- Then I took two slices of brioche bread and placed a layer of sliced chicken, a layer of roasted red peppers, and a layer of Colby-jack sliced cheese on one of the slices of bread. Then I put the other slice of bread on top and I brushed melted butter on the top and bottom of the sandwich.
- Then I placed the sandwich in a panini grill and cooked it until the bread was golden brown. Then I removed the sandwich, added sliced avocado, and cut the sandwich diagonally.
